Blueberry Lemon Layer Cake

My friend Andrea brought over fresh blueberries from her grandmother’s farm, and homemade blueberry jam. Lord have mercy that jam was delicious and I’ve demanded she bring it back every time she goes to the farm in the summer! Greek Chicken

Pretty much anything Tieghan makes over at Half Baked Harvest is delicious. We stumbled upon this Greek chicken during quarantine, and have made it several times. I typically just throw mine in a salad or in store bought Stonefire Naan. Marinate it overnight and then throw it in the oven for a quick meal. Highly recommend this recipe!

Creamy Beef Pasta

The real winner of quarantine has been Quin over at Butterbeready‘s One-pot creamy beef pasta (read: grown up hamburger helper)! It’s comfort food from your childhood and so delicious. It’s quick, super easy, and a real winner with the husband. Look, it’s great to have an arsenal of gorgeous meals on rotation, but sometimes you just need to throw everything in a pot and call it a day. And if you don’t consider yourself much of a home chef, this is a great recipe to start with.

This time at home has been hard to process, and cooking and baking has helped get me through some hard days. And these women, Tieghan, and Quin, and all the other home cooks on instagram have brought me so much joy during this strange time. So, thank you.
